Chicken Noodle Soup Recipe

Ingredients:

🔸️1 tablespoon olive oil

🔸️1 medium onion, diced

🔸️2 medium carrots, sliced

🔸️2 celery stalks, sliced

🔸️3 cloves garlic, minced

🔸️8 cups (2 liters) chicken broth

🔸️2 cups cooked chicken, shredded or diced

🔸️1 ½ cups egg noodles

🔸️1 teaspoon dried thyme

🔸️1 teaspoon dried parsley

🔸️Salt and pepper to taste

🔸️Juice of ½ a lemon


Instructions:

🔸️ Heat olive oil in a large pot over medium heat.

🔸️ Add the diced onion, carrots, and celery. Sauté for 5-7 minutes, until the vegetables are softened.

🔸️ Stir in the minced garlic and cook for an additional minute, until fragrant.

🔸️ Pour in the chicken broth and bring the mixture to a boil.

🔸️ Add the thyme, parsley, salt, and pepper. Reduce heat to a simmer.

🔸️ Add the egg noodles to the simmering broth and cook according to the package instructions (usually 6-8 minutes) until tender.

🔸️ Stir in the shredded chicken and let it heat through for about 2-3 minutes.

🔸️ Taste and adjust seasoning with more salt, pepper, or a squeeze of lemon juice if desired.

🔸️ Serve hot, garnished with fresh parsley if using.
