Cranberry & Herb Chicken Delight Recipe

 

Perfectly juicy chicken paired with a tangy-sweet cranberry sauce – a treat for your taste buds.

Ingredients:
🔸️4 boneless, skinless chicken breasts
🔸️2 tbsp olive oil
🔸️Salt and freshly ground black pepper, to taste
🔸️1 tsp garlic powder
🔸️1 tsp dried thyme
🔸️1 cup fresh or dried cranberries (if using dried, soak in warm water for 10 minutes)
🔸️½ cup chicken stock
🔸️¼ cup honey
🔸️1 tbsp vinegar
🔸️1 tsp fresh rosemary, chopped
🔸️1 tsp fresh thyme, chopped
🔸️2 tbsp unsalted butter

Instructions:
🔸️ Preheat your oven to 180°C (350°F).
🔸️ Season the chicken breasts with salt, pepper, garlic powder, and thyme.
🔸️ Heat olive oil in a large ovenproof skillet over medium heat.
🔸️ Remove the chicken from the skillet and set aside.
🔸️ In the same skillet, add cranberries, chicken stock, honey, vinegar, rosemary, and thyme.
🔸️ Simmer for 5–7 minutes until the cranberries burst and the sauce thickens slightly.
🔸️ Return the chicken breasts to the skillet, spooning some of the sauce over them.
🔸️ Place the skillet in the preheated oven and bake for 20–25 mins or until the chicken reaches an internal temperature of 75°C (165°F).
🔸️ Remove the skillet from the oven and stir in the butter for a glossy sauce.
🔸️ Let the chicken rest for 5 minutes before serving.
