Creamy Scallop Pasta Recipe

Ingredients:
🔸️200g pasta
🔸️250g scallops (roe-off, cleaned and patted dry)
🔸️1 tbsp olive oil
🔸️2 tbsp butter
🔸️2 garlic cloves (finely chopped)
🔸️100ml double cream
🔸️30g grated Parmesan cheese
🔸️Salt and freshly ground black pepper
🔸️Fresh parsley (chopped, for garnish)
🔸️Optional: zest of ½ lemon for extra zing


Instructions:
🔸️ Boil a pot of salted water and cook the pasta according to the packet instructions. Drain and set aside, reserving a little pasta water
🔸️ While the pasta cooks, heat olive oil in a non-stick pan over medium-high heat. Season scallops lightly with salt and pepper, then sear for about 1.5–2 minutes per side, until golden and just cooked through. Remove and set aside.
🔸️ In the same pan, reduce heat slightly. Add butter and garlic, cooking for 1 minute until fragrant. Pour in the cream, bring to a gentle simmer, then stir in the Parmesan. If the sauce is too thick, add a splash of pasta water.
🔸️ Add cooked pasta to the sauce and toss to coat. Return scallops to the pan to warm through. Season with salt, pepper, and lemon zest if using.
🔸️ Plate up and garnish with chopped parsley and extra Parmesan if desired.
