This Green Pea & Mint Soup is light, creamy, and packed with flavour.
Perfect for any season! 💚✨
Ingredients:
🔸️1 tbsp olive oil
🔸️1 small onion
🔸️1 garlic clove, minced
🔸️500g (4 cups) frozen or fresh green peas
🔸️750ml (3 cups) vegetable stock
🔸️10–12 fresh mint leaves
🔸️100ml (⅓ cup) double cream
🔸️Salt and black pepper, to taste
🔸️Squeeze of lemon juice (optional, for added freshness)
Instructions:
🔸️ Heat the olive oil or butter in a large saucepan over medium heat. Add the chopped onion and garlic, and sauté for about 5 minutes until soft and translucent.
🔸️ Add the green peas and vegetable stock. Bring to a boil, then reduce the heat and simmer for 5–7 minutes until the peas are tender.
🔸️ Remove from heat and add the fresh mint leaves. Use a blender or immersion blender to blend the soup until smooth.
🔸️ Stir in the cream (if using), season with salt and black pepper, and add a squeeze of lemon juice if desired.
🔸️ Ladle into bowls and garnish with extra mint leaves or a drizzle of cream. Serve warm or chilled with crusty bread.
