Lentil Soup Recipe

This red lentil soup checks all the boxes — rich in flavour, easy to prep, and 100% comforting! 🥄 
Ingredients:
🔸️1 cup red lentils (masoor dal), rinsed well
🔸️1 medium onion, finely chopped
🔸️2 garlic cloves, minced
🔸️1-inch piece of ginger, grated
🔸️1 medium carrot, diced
🔸️1 tomato, chopped (or ½ cup canned tomatoes)
🔸️1 tsp cumin seeds, and 1 tsp chilli powder
🔸️½ tsp turmeric powder
🔸️½ tsp ground coriander
🔸️Salt to taste
🔸️1 tbsp olive oil or ghee
🔸️4 cups water or vegetable stock
🔸️Fresh coriander leaves for garnish
🔸️Juice of half a lemon (optional)

Instructions:
🔸️ In a large pot, heat the oil or ghee over medium heat. Add cumin seeds and let them sizzle. Add the chopped onion, garlic, and ginger. Sauté until the onion is soft and golden.
🔸️ Stir in the carrots and tomatoes. Cook for 3–4 minutes, then add turmeric, ground coriander, paprika/chilli powder, and salt.
🔸️ Add the rinsed lentils and pour in the water or stock. Bring to a boil, then lower the heat and simmer for about 25–30 minutes, or until the lentils are soft and the soup thickens.
🔸️ For a smoother texture, blend the soup using a hand blender. Or leave it chunky if you prefer a heartier feel.
🔸️ Adjust seasoning. Stir in lemon juice for a zesty kick and garnish with fresh coriander.
