Rice Kheer Recipe

Sweeten your Iftar with a bowl of creamy, traditional Rice Kheer! 🍚🥄
Perfect for sharing with loved ones this Ramadan. 🌙✨
Ingredients:
🔸️1/2 cup basmati rice
🔸️1 litre full-fat milk
🔸️1/2 cup sugar
🔸️3-4 green cardamom pods
🔸️10-12 almonds (sliced or chopped)
🔸️8-10 cashews (optional, chopped)
🔸️8-10 pistachios
🔸️A few strands of saffron
🔸️1 tbsp raisins (optional)
🔸️1 tsp rose water or a few drops of kewra essence (optional, for added fragrance)

Instructions:
🔸️ In a heavy-bottomed pan, bring the milk to a boil over medium heat.
🔸️ Add the soaked and drained rice to the milk.
🔸️ Let it simmer on low heat, stirring occasionally to prevent sticking.
🔸️ As the rice cooks, the milk will start to thicken. Keep stirring gently, especially from the bottom, to ensure it doesn’t burn.
🔸️ This process takes about 30-40 minutes until the rice is soft and the milk is creamy.
🔸️ Once the rice is cooked, add sugar and crushed cardamom pods. Stir well until the sugar dissolves.
🔸️ Mix in the chopped almonds, cashews, raisins, and saffron strands (if using). Let it simmer for another 5-7 minutes.
🔸️ When the kheer reaches a rich and creamy consistency, turn off the heat.
🔸️ Add rose water or kewra essence for a delicate floral hint.
🔸️ Pour the kheer into serving bowls.
🔸️ Garnish with sliced pistachios and a few saffron strands for a festive look.
