Ingredients:
🔸️1 kg chicken wings, trimmed and split
🔸️3 tbsp peri-peri sauce
🔸️2 tbsp olive oil
🔸️1 tbsp lemon juice
🔸️3 garlic cloves, minced
🔸️1 tsp smoked paprika
🔸️1 tsp dried oregano
🔸️½ tsp salt
🔸️½ tsp black pepper
🔸️Fresh parsley, chopped
🔸️Lemon wedges
Instructions:
🔸️ In a large bowl, combine the peri-peri sauce, olive oil, lemon juice, garlic, smoked paprika, oregano, salt, and black pepper. Mix well to create a thick marinade.
🔸️ Add the chicken wings to the bowl and toss until evenly coated. Cover and refrigerate for at least 2 hours, or ideally overnight for maximum flavour.
🔸️ Preheat the oven to 200°C. Line a baking tray with foil and place a wire rack on top. Arrange the wings on the rack and bake for 35-40 minutes, turning halfway, until crispy and cooked through.
🔸️ Preheat the grill to medium-high heat. Grill the wings for 15-20 minutes, turning occasionally until charred and cooked through.
🔸️ Once cooked, brush the wings with extra peri-peri sauce for added spice and shine.
🔸️ Garnish with fresh parsley and serve with lemon wedges and a cooling dip like garlic mayo or yogurt.
